Linguine with White Clam Sauce

Serves: 4

Ingredients:

  • 1 pound linguine
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon The Spice Way Red Pepper Flakes, plus more to taste
  • 2 cans (10 ounces each) chopped clams with their juice
  • 1/2 cup dry white wine
  • 2 tablespoons unsalted butter
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon juice
  • Salt and The Spice Way Black Pepper to taste

Preparation:

  1. Cook linguine in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes and cook 30 seconds until fragrant. Add white wine and clam juice and simmer 2 to 3 minutes.
  3. Stir in clams and butter and cook until heated through. Add linguine, parsley, and a splash of pasta water, tossing until glossy and lightly coated.
  4. Finish with lemon juice and season with salt and black pepper. Serve immediately.
