Beef Kofta Pitas with Mint Yogurt and Onion Salad

Serves: 4
Ingredients
  • 1 lb ground beef
  • 1 1/2 tablespoons The Spice Way Kebab Seasoning
  • 1/2 small onion, grated and squeezed dry
  • 2 tablespoons chopped parsley
  • 1 teaspoon kosher salt
  • 1 tablespoon olive oil
  • 4 pitas
For the Mint Yogurt
  • 1 cup plain Greek yogurt
  • 2 tablespoons chopped mint
  • 1 tablespoon lemon juice
  • Pinch of salt
For the Onion Salad
  • 1 small red onion, thinly sliced
  • 1 tomato, diced
  • 1 tablespoon lemon juice
  • Pinch of salt
Preparation
  1. Stir together the yogurt, mint, lemon juice, and salt.
  2. Toss the onion and tomato with the lemon juice and a pinch of salt.
  3. Mix the beef, Kebab Seasoning, grated onion, parsley, and kosher salt until sticky. Shape into 8 short cigar-shaped koftas.
  4. Heat the olive oil in a grill pan or skillet over medium-high heat. Cook the koftas for 8 to 10 minutes, turning as needed, until browned and cooked through.
  5. Warm the pitas and fill with kofta, mint yogurt, and onion salad.
Plating Note

Keep the onion salad loose and bright, not heavily dressed, so it cuts the richness of the meat.
